You should then see suggestions to correct each spelling mistake (Make sure the cursor is on the word you want to correct before clicking 'spelling and grammar'). Outlook uses a dashed red underline to indicate possible spelling errors and a dashed green line to indicate possible grammatical errors. Leave it to Microsoft to put the "check or don't check" box under Language rather than Spelling.
